West Coast Ratatouillie

Right now we’re feeling the west coast vibes outside and with the veggies in this recipe, the first of Chef Steve Walker-Duncan’s culinary creations we get to share with you, you can enjoy the flavours of the west coast on your plate!


This ratatouille is both hearty and fresh, and uses loads of great veggies currently available from farmers through the online store.


The South Island FarmHub partnered with Chef Walker-Duncan of Camosun College and the Camosun Culinary Arts Department to support the Camosun Cares Initiative, which provides hampers filled with fresh local food, to Camosun students. Over 200 hampers have been handed out to 180 students!
